These Air Fryer Sabudana Vada are crisp on the outside and soft in the center, with plenty of flavor from roasted peanuts, cumin, green chilies, cilantro, and potatoes.

Traditional sabudana vada are usually deep-fried, but I make this version in the air fryer with just a light spray of oil. I air fry them at 400°F for about 10-15 minutes, flipping halfway so both sides brown evenly.
The combination of soaked sabudana, mashed potatoes, and ground roasted peanuts also makes the mixture easy to shape without adding flour or breadcrumbs.
They work well as a snack, appetizer, or part of a Navratri or vrat meal.

- Simple ingredients. Sabudana, potatoes, peanuts, and basic Indian spices do the heavy lifting.
- Easy to make ahead. Shape the vada ahead of time and air-fry when you are ready to eat.
- Great use for soaked sabudana. Especially useful if you're already making other sabudana recipes during Navratri.

What Makes Sabudana Vada Hold Together?
The potatoes and ground roasted peanuts are important here.
- The mashed potatoes bind the sabudana together and give the center a soft texture.
- The roasted peanuts do more than add flavor. Once ground, they absorb some moisture and give the mixture a little more structure.
You should be able to pick up a portion of the mixture and press it into a patty without it falling apart.
If the mixture feels very wet, make sure you drained the sabudana thoroughly before mixing.
Ingredient Notes
- Sabudana: Use 1 cup rinsed and soaked sabudana. The pearls should be soft before you make the vada. If you press one between your fingers, it shouldn't have a hard center.
- Potatoes: I use 1-2 boiled potatoes, depending on their size and how the mixture feels. The potato is your main binder. Start with one and add more if the mixture isn't holding together well.
- Roasted Peanuts: I use about ¼ cup roasted peanuts and blend them before adding them to the mixture. I don't make them completely smooth like peanut butter. A ground texture works well and still gives the vada some bite.
- Spices: I usually use salt, red chili powder, roasted cumin powder, and garam masala in the vadas.
- Green Chilies and Cilantro: These add freshness and heat without making the filling heavy. Adjust the green chilies depending on how spicy you want the vada.
How to Make Air Fryer Sabudana Vada

1. Prepare the Sabudana
Rinse and soak the sabudana until the pearls are soft. Drain them well before making the mixture. You don't want excess soaking water going into the vada.

2. Make the Vada Mixture
Add the soaked sabudana to a large bowl with mashed potatoes and ground roasted peanuts. Add roasted cumin powder, red chili powder, garam masala, salt, chopped cilantro, and green chilies.
Mix everything together well.
Top Tip
I like to use my hands at this stage because it's easier to tell whether the mixture will hold its shape.
3. Check the Consistency
Take a small portion and squeeze it together. It should hold without crumbling apart.
If it feels too loose, add a little more mashed potato. If it feels excessively wet, the sabudana may not have been drained enough.

4. Shape the Vada
Divide the mixture into portions. Gently roll each portion between your palms, then flatten it into a thick patty.
Try to keep them similar in size so they cook at roughly the same rate

5. Spray with Oil
Arrange the vada in the air fryer basket with some space between them. Lightly spray the tops with oil.
You don't need a lot-the spray mainly helps the surface brown and crisp.

6. Air Fry
Air fry at 400°F for 10-15 minutes. Flip them halfway through so both sides cook evenly.
After flipping, you can add another very light spray of oil if the surface looks dry. Continue cooking until the outside looks golden and lightly crisp
Top Tip
Air fryers vary, so start checking around the 10-minute mark rather than relying only on the timer.
How Do You Know When Sabudana Vada Is Done?
Look at the outside rather than expecting the vada to become extremely dark.
You want:
- lightly golden edges
- a dry, crisp-looking surface
- some browning on both sides
- a soft center that still holds together
Because the main ingredients are already cooked or soaked, the air-frying step is mostly about heating everything through and developing that crisp exterior.
Tips for Crispy Air Fryer Sabudana Vada
- Drain the sabudana well: Extra moisture works against crisping and can make the patties difficult to shape.
- Don't make the vada too thick: Slightly flattened patties expose more surface area to the hot air.
- Leave space between them: Crowding limits air circulation and can give you softer sides.
- Use oil spray: A small amount helps considerably with browning.
- Flip halfway: This is especially important in an air fryer because the top and bottom don't always brown at the same rate.
- Don't keep opening the air fryer repeatedly: Check around halfway and again toward the end.
- Serve soon after cooking: Like most air-fried snacks, they're crispiest shortly after they come out of the air fryer.

Can I Make Them Without Deep Frying?
That's exactly why I like this version.
Traditional sabudana vada are often fried in oil, which gives them a very crisp crust. The air-fryer version will be slightly different, but you can still get a nicely browned, crisp exterior with only oil spray.
The two things that help most are keeping the mixture from getting too wet and flipping it halfway through air frying.
Sabudana Vada for Navratri or Vrat
Sabudana vada are popular during fasting periods such as Navratri. However, fasting rules aren't identical in every household.
If you're making these specifically for vrat, adjust the salt and spices according to what your family uses. For example, many people use sendha namak during fasting, while rules around chili powder, garam masala, and other seasonings can differ.
That way, you can keep the base recipe the same and customize the seasoning for your own fasting practices.
What to Serve with Sabudana Vada
Serve these hot, while the outside is still crisp.
You can serve them with:
- plain yogurt
- lightly seasoned yogurt
- green chutney
- vrat-friendly coriander chutney
- lemon wedges
- extra roasted peanuts
If I'm serving several sabudana dishes together, I like having something cool and creamy next to the vada because it balances the crispy exterior and chili.
For a complete sabudana meal, serve these vada with my Sabudana Khichdi, then finish with creamy Sabudana Kheer.
That gives you strong internal links to the other two posts in the cluster.
Can I Make Sabudana Vada Ahead?
Yes.
You can prepare the mixture and shape the patties ahead of time. Store them in a covered container in the refrigerator, then air-fry them closer to serving time.
I prefer doing this rather than fully cooking them too far ahead because freshly air-fried vada have the best exterior texture.
How to Store Leftovers
Allow leftover sabudana vada to cool completely. Store them in an airtight container in the refrigerator for about 2-3 days.
Don't seal them while they're still hot because trapped steam can soften the exterior.
How to Reheat Sabudana Vada
The air fryer is the best way to reheat them because it helps bring back some of the crisp texture.
Place the refrigerated vada in the air fryer and heat until warmed through and crisp again, about 5 minutes.
You generally won't need much additional oil, although a very light spray can help if the surface looks dry.
I would avoid microwaving them if crispness matters. The microwave will heat them, but the outside will become softer.
Can You Freeze Sabudana Vada?
You can freeze shaped patties, but for the best texture, I prefer making them fresh or refrigerating them briefly.
If you do freeze them, arrange the shaped vada separately until firm, then transfer them to a freezer-safe container so they don't stick together.
Air-fryer timing may need adjusting if you're cooking them from frozen.

Variations
- Sweet Potato Sabudana Vada: You can experiment with sweet potato in place of regular potato. It will give the vada a slightly sweeter flavor that works well with peanuts, cumin, chili, and lemon.
- Spicier Vada: Add more chopped green chili or red chili powder.
- More Peanut Flavor: Leave the roasted peanuts slightly coarse rather than grinding them very finely. You'll get small crunchy pieces throughout the vada.
Frequently Asked Questions
Usually, the mixture needs more binding or contains too much moisture. Make sure the soaked sabudana is drained well and add enough mashed potato for the mixture to hold together when pressed.
A wet mixture, overcrowded basket, or too little surface oil can prevent browning. Leave space between the patties, spray lightly with oil, and flip halfway.
Peanuts contribute both flavor and texture to this version, so removing them changes the recipe. If you need a peanut-free version, you'll likely need to adjust the potato or another binding ingredient rather than simply leaving them out.
Yes, you can refrigerate the prepared mixture or shaped patties and air fry them the next day.
