This sprouts chaat is a fresh, colorful Indian-style chaat made with cooked sprouts, corn, onion, cucumber, tomatoes, cilantro, roasted peanuts, and either dried cranberries or pomegranate.

It has a little bit of everything-spicy, tangy, sweet, juicy, and crunchy-without needing chutneys or a heavy dressing.
I usually make this when I already have a batch of homemade sprouts ready in the refrigerator. Instead of repeating the sprouting process here, I keep this recipe focused on turning those sprouts into a quick chaat.

Why You'll Love This Sprouts Chaat
- This one works especially well because the toppings give you different textures and flavors in every bite.
- The sprouts and corn make up the base, cucumber and tomato keep it fresh, roasted peanuts add crunch, and the cranberries or pomegranate give little bursts of sweetness.
- The seasoning is simple: roasted cumin, chaat masala, garam masala, chili, salt, and fresh lemon juice.

Ingredients
- Sprouts: Use homemade or store-bought sprouts. If you want to sprout your own moong, chickpeas, or other beans, link here to your How to Make Sprouts at Home guide instead of explaining it again. Your separate guide already covers moong, moth, chickpeas, and storage.
- Vegetables: You can add vegetables like onion, cucumber, tomatoes, boiled corn, or potatoes to make it filling and nutritious.
- Seasonings: Add basic Indian seasonings including turmeric powder, garam masala, red chili powder, roasted cumin powder, and chaat masala.
- Sweet + Crunchy Add-Ins: I usually add cranberries or pomegranate seeds for sweetness and roasted peanuts for crunch.
How to Make Sprouts Chaat

1. Cook the Sprouts
Add the sprouts to a pot with enough water to cook them.
Add ½ teaspoon turmeric and cook for 3- 5 minutes, or until the sprouts are tender but still have some bite.
Do not overcook them until mushy-you want the sprouts to still hold their shape in the chaat.
Drain well and let them cool.

2. Add the Vegetables
Transfer the cooled sprouts to a large bowl.
Add:
- onion
- cucumber
- tomatoes
- boiled corn
- cilantro
I cook the sprouts before adding them to the chaat. Raw sprouts can carry food-safety risks, and the FDA recommends cooking sprouts thoroughly to reduce that risk. U.S. Food and Drug Administration

3. Season
Add:
- red chili powder
- garam masala
- chaat masala
- roasted cumin powder
- salt
Squeeze fresh lemon juice over everything.

4. Add the Sweetness and Crunch
Add either dried cranberries or pomegranate seeds.
Finish with roasted peanuts.
Toss everything together and taste.
Add more lemon, chaat masala, or salt if needed.
Serve immediately.
Cranberries vs Pomegranate
Both work, but they give slightly different results.

Dried cranberries are convenient because you can keep them in the pantry and use them anytime.
If I were choosing for the hero recipe, I'd use pomegranate as the first option and keep cranberries as your tested substitute.
My Tips for the Best Sprouts Chaat
- Don't overcook the sprouts: They should be tender but still have texture.
- Drain them well: Extra water dilutes the spices and makes the chaat watery.
- Cool before adding cucumber and tomato: That keeps the vegetables crisp.
- Add peanuts at the end: This helps them stay crunchy.
- Taste after adding lemon: Lemon, salt, and chaat masala are what really bring the flavors together.
- Serve soon after mixing: The vegetables release water as they sit.

Can I Make Sprouts Chaat Ahead?
You can prep most of it ahead.
Cook and cool the sprouts, chop the vegetables, and refrigerate.
For the best texture, add:
- lemon juice
- salt
- chaat masala
- peanuts
closer to serving time.
Can I Use Different Sprouts?
Yes.
Moong sprouts are an easy choice, but you can also use other sprouted lentils or beans.
Your sprouts guide already covers several types, including moong, moth, black chickpeas, and white chickpeas, so I would link to that rather than turn this post into another sprouting tutorial.
