🥘 INGREDIENT NOTES

  1. Potatoes: This is the central part for making Tikki (patty). Use boiled and mashed potatoes so that the tikkis can be appropriately shaped.
  2. Green Peas: Add a soft texture and sweetness to the tikki. Use boiled and lightly mashed peas.
  3. Spices: You don't need many spices to make tikki. Add red chili powder, garam masala powder, roasted cumin powder, and chaat masala.
  4. Poha: Add soaked poha to the potato mixture to absorb moisture from the potatoes.
  5. All Purpose & Corn Flour Mix: Dipping the tikki in all-purpose flour and corn flour batter helps bread the tikki properly.
  6. Breadcrumbs: Once tikkis are dipped in all-purpose batter, they need to be breaded using breadcrumbs to make the outer layer crisp.
  7. Burger Buns: You can use soft burger buns or whole wheat buns. Toast them in the pan with some butter for extra taste.
  8. Topping: You will also need lettuce, sliced tomatoes, onions, and a Cheese slice (optional).
  9. Sauces: For a creamy and slightly spicy flavor, use Sriracha mayonnaise. You can also use Ketchup.

See the recipe card for quantities.

Make Tikki (Patty):

In a pan saute onion with cumin seeds until they turn golden-brown in color.
  1. Step 1—Saute Onions: Add oil to a pan. When the oil is hot, add cumin seeds. Once the cumin seeds splutter, add the chopped onions.
Add boiled and mashed potatoes in the pan, once onions are sauteed.

2. Step 2—Add Potatoes: Once the onions are sauteed and turn golden brown, add boiled and mashed potatoes, free from lumps. You can also add boiled and mashed peas at this time.

Next, add spices, cilantro, and soaked poha to the potatoes.

3. Step 3 - Add Spices: Next, add spices, including red chili powder, garam masala powder, chaat masala, and salt. Then add finely chopped cilantro to the potatoes.

Mix all the ingredients until well combined and let it sit until it comes to room temperature.

4. Step 4 - Mix: Mix all the ingredients until combined properly. Let it sit until the potatoes are no longer hot and at room temperature.

Bread Tikki:

Make all purpose flour batter.

5. Step 5—Make Flour Batter: Mix all-purpose flour and corn flour with water until it resembles pancake batter.

Add breadcrumbs in a bowl and mix salt.

6. Breadcrumbs: Next, add breadcrumbs and salt to another bowl.

Take a ball-shaped potato mixture and flatten it. Then dip it in all-purpose flour batter.

7. Step 7 - Dip Tikki in Batter: Take a ball-shaped potato mixture, form it into a ball, and flatten it. Then dip it in all-purpose flour batter.

Then coat the tikkis in breadcrumbs properly.

8. Step 8—Coat: Then, properly coat the Tikki with breadcrumbs. This will help provide the crispy texture.

Frying:

Heat oil in pan. Once oil is hot, add breaded tikki.

9. Step 9—Fry Tikki: Drop the tikki in hot oil and fry until both sides are golden brown.

Once the tikkis turn golden-brown from both sides, remove it from the frying pan. Place them on a slotted tray.

10. Step 10—Remove Excess Oil: Once the tikkis are fried and crispy, place them on the slotted tray to remove excess oil.

11. Add lettuce and mayonnaise to a bowl and mix until well combined.

12. Add butter to the pan and toast buns until crispy.

Assembling:

12. Place the bottom half of the bun on a plate and add a spoonful of siracha-mayonnaise to it.

13. Top it with lettuce and Cheese (optional). Then add fried tikkis and lightly press them. Add onion and tomato slices to it. Add ketchup, or any other sauce of your choice. Cover with the top bun, and enjoy!

Burger Aloo Tikki placed on a cutting board and garnish with sriracha mayonaisse and served with onion, tomatoes, and lettuce.

💭EXPERT TIPS

  1. Get Starchy Potatoes: Choose russet or regular Indian potatoes, which mash well and hold their shape better. Avoid waxy potatoes.
  2. Make the Mixture Dry: Ensure the potato mixture is dry and not moist. If it is moist, add soaked poha, as it lacks flavor.
  3. Chill the Potatoes: Chill the potatoes for 15-20 minutes in the refrigerator before frying. This helps them stay firm and crisp during cooking.
  4. Cook at Medium Heat: Fry the tikkis on medium heat to ensure they're golden and crispy on the outside and soft on the inside. High heat can burn them quickly.
  5. Toast the Buns: Lightly toast the burger buns with butter or ghee to prevent them from becoming soggy and add extra taste.
  6. Add Crunchy Veggies: For extra texture, use lettuce, onions, or even coleslaw. Pat the veggies dry before adding them to avoid a soggy burger.

FAQs

Can I make aloo tikki burger ahead of time?

Yes! You can shape the tikkis and refrigerate them for up to 24 hours before frying or baking.

Why is my tikki breaking while frying?

If the mixture is too soft or wet, it can break. Add breadcrumbs or cornflour to firm it up. Chilling the tikki before frying helps it hold its shape.

Can I bake or air fry Aloo Tikki instead of frying?

Absolutely! You can bake at 180°C (350°F) for 20–25 minutes or air fry at 180°C for 15–18 minutes until golden and crisp.

What can I use instead of Mayonnaise?

For a healthy and flavorful spread, you can use yogurt-based dips, hung curd with herbs, or green chutney.

How can I store leftover tikki?

Cool them completely and store them in the fridge for up to 2 days. Reheat by pan-frying or air-frying before using. You can also freeze tikki, which will increase the shelf life.

What sides go well with Aloo Tikki Burger?

Serve it with French fries, baked potato wedges, coleslaw, or fruit juice for a complete meal.
