I just wait for mango season so that I can eat the fruit as it is, or sometimes I use them in different recipes. This is one summer treat that I like to make again and again with fresh or frozen mangoes.

To make this delicious homemade mango popsicle, you need is 2 ingredients. That's right, sweet mangoes and coconut water. I use the sweetest frozen mangoes, so I don't need to add honey or sugar. But if mangoes are not sweet, I recommend adding honey or maple syrup to balance the flavors.

Apart from this, you can also try my Mango Rice Pudding. Another popular treat that you can enjoy, hot or cold. Also, try my Quinoa Salad which is made with mangoes and full of delicious flavors.

Mango Popsicle - list of ingredients.

INGREDIENTS THAT YOU'LL NEED

  • MANGOES: You can use fresh or frozen mangoes in the popsicle. Make sure to use extra sweet mangoes because you won't need to add honey/sugar. When using fresh mangoes, strain the puree if it has lots of hair. You can also use frozen mango bags from Indian stores like Kesari Aam (mangoes), as those are extremely sweet & flavorful. Or you can also use Trader Joe's Thai Mangoes bag.
  • COCONUT WATER: The second ingredient that you will need is coconut milk. Use the most natural coconut water that you can find. I use Naturally Harvest Coconut Water that is cold-pressed. It is extremely sweet and tastes much better than other brands of coconut water.

Some Additional Ingredients you can use:

  • Honey/Maple Syrup: If the mangoes are not sweet enough, you can add honey/maple syrup.
  • Yogurt: Instead of coconut water, you can also use greek yogurt and some water for extra creamy flavor.
  • Lemon Juice: If you're using honey/maple syrup, add some lemon juice to balance the flavors.

See the recipe card for quantities.
