This Gochujang Carrot Air Fryer recipe makes the perfect sweet, spicy, and sticky Korean-inspired side dish. The air fryer caramelizes the carrots beautifully in just 10–12 minutes, giving you a quick and healthy vegetable side with almost no effort.

🥕 Ingredient Notes

  1. Carrots: Use baby carrots, whole peeled carrots, or multi-colored carrots. Slice thick carrots into evenly sized sticks for fast and even cooking.
  2. Gochujang: Korean chili paste that brings heat, sweetness, and umami. Mildly spicy and very flavorful.
  3. Honey/Maple Syrup: Balances the spice and creates a sticky glaze. Maple syrup makes the recipe fully vegan.
  4. Soy Sauce: Balances the spice and creates a sticky glaze.
  5. Garlic: Fresh or powdered, both work well.
  6. Rice Vinegar: Adds acidity and brightens the glaze.
  7. Oil: Carrots roast well without oil, but 1 teaspoon or a spray of oil increases caramelization.

🔪 How to Make Gochujang Carrots (Air Fryer)

  1. Step 1 - Make the Glaze: Add gochujang, soy sauce, grated garlic, and your seasonings to a small bowl.
    This will be your sweet, spicy, and sticky glaze.

2. Step 2 - Whisk: Whisk everything together until the glaze becomes thick and smooth with no lumps.
Taste and adjust the sweetness or spice if needed.

3. Step 3- Add the Glaze to Carrots: Place your rainbow carrots (or regular carrots) in a large bowl.
Pour the prepared gochujang glaze on top.

4. Step 4 - Toss to Coat: Use a spoon or your hands to mix the carrots until each one is fully coated in the glaze.
Make sure there's no dry spot left.

5. Step 5 - Arrange in Air Fryer: Place the glazed carrots in a single layer in the air fryer basket.
Leaving space helps them roast evenly and caramelize.

Air-fry at 380°F (193°C) for 10–12 minutes, shaking halfway through. If using thicker carrots, add 2–3 more minutes.

6. Step 6 - Toast the Nuts (optional): Add almonds and pistachios to a small baking tray and toast them for a few minutes.
These give the carrots a crunchy, flavorful topping.

Garnish with toasted nuts, green onions, and sesame seeds.

⏲️ Oven Method (for Larger Batches)

  1. Preheat oven to 425°F (220°C): Preheat the oven to 425°F and line a sheet pan with parchment paper.
  2. Spread the carrots in a single layer: Add them to a bowl and glaze evenly. Place the carrots in a single layer, leaving space between carrots.
  3. Roast for 18–22 minutes: Roast the carrots for 18-22 minutes, flipping the carrots halfway through until the edges of the carrots are caramelized.
  4. Finish & Serve: Garnish with toasted nuts, green onions, and sesame seeds.

  • 2 lb Carrots
  • 2 tablespoon Gochujang
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Honey or Maple Syrup
  • 1 teaspoon Sesame Oil
  • 1 teaspoon Chili Oil optional
  • 1 tablespoon Rice Vinegar/Lemon
  • ½ teaspoon Garlic
  • Salt & Pepper as needed

Method
 

  1. In a bowl, whisk gochujang, soy sauce, honey/maple syrup, sesame oil/ chili oil, rice vinegar, garlic, and salt & pepper. This will be sweet and spicy glaze.
    Taste and adjust the flavor, if needed.
    2 tablespoon Gochujang, 2 tablespoon Soy Sauce, 1 tablespoon Honey or Maple Syrup, 1 teaspoon Sesame Oil, 1 teaspoon Chili Oil optional, 1 tablespoon Rice Vinegar/Lemon, ½ teaspoon Garlic, Salt & Pepper as needed
  2. Place the carrots in a big bowl and add the glaze to them. Use a spoon or your hand and coat th carrots completely with the glaze.
    2 lb Carrots
  3. Place the carrots in the air fryer basket byt leaving a gap between two carrots and do not overcrwd the batche
  4. Preheat air fryer at 380F for 3 minutes. Air Fry at 380°F for 12- 15 minutes. Shake the basket halfway around 7 minutes. If using thicker carrots, then air fry for 2 minutes more.
  5. Toast almonds and pistachios at 380°F for 5 minutes and then roughly chop them.
    1 tablespoon Almonds, 1 tablespoon Pistachios
  6. Top the carrots with green onions, sesame seeds, and chopped nuts.
    1 teaspoon Sesame seeds to garnish
