Prepare the corn

  • Remove the husks and silk completely. Pat the corn dry.

Gas burner instructions

  • Roast: Using long heat-safe tongs, place the corn directly over a medium to medium-high gas flame.
Rotate frequently until the kernels are cooked and have scattered brown and black charred spots on all sides, about 8–10 minutes.

  • Season: Dip the cut side of a lemon half into the prepared spice mixture. Rub the lemon over the hot corn while gently squeezing so the juice and masala coat the kernels.

Notes

  • Rotate the corn frequently rather than blackening one entire side.
  • Look for scattered charred spots while the kernels remain plump.
  • Rub the lemon and masala over the corn while it is still hot.
  • Chaat masala contains salt, so taste before adding extra.
  • For the smokiest flavor, I prefer the gas-flame method; the air fryer is convenient but doesn't produce quite the same charred flavor.
  • Butter is optional.
