Aam Panna Recipe

A refreshing Indian summer drink made with raw green mangoes, mint, roasted cumin, black salt, and sugar. This version is made as a ready-to-drink pitcher and can be prepared in the Instant Pot or on the stovetop.

Ingredients
  

  • 4 –5 raw green mangoes peeled and cut into pieces
  • ¼ –½ cup sugar adjust to taste, (jaggery, honey, or maple syrup in place of sugar)
  • 1 teaspoon black salt
  • ½ teaspoon roasted cumin powder
  • 8 –10 fresh mint leaves
  • regular salt to taste
  • cold water as needed
  • ice for serving
  • Optional:
  • lemon or lime juice if mangoes are not tart enough

Instructions
 

Prepare the mangoes

  • Peel the raw green mangoes and cut the flesh away from the seed into chunks.
    4 –5 raw green mangoes

Cook in the Instant Pot

  • Add the mango pieces with 2 cups of water to the pressure cooker. Pressure cook for about 6 minutes. Let the pressure release naturally for 5 minutes, then release the remaining pressure.

OR — Stovetop Method

  • Add the mango pieces to a saucepan with enough water to prevent sticking. Cook until completely soft and easy to mash.

Add the flavorings

  • Add sugar, black salt, roasted cumin powder, regular salt, and fresh mint.
    ¼ –½ cup sugar, 1 teaspoon black salt, ½ teaspoon roasted cumin powder, 8 –10 fresh mint leaves, regular salt

Blend

  • Blend until completely smooth using an immersion blender or regular blender.

Add water

  • Transfer to a pitcher and add cold water gradually until you reach your preferred drinking consistency.

Taste and adjust

  • Taste and add more sugar, salt, or water if needed. If the mangoes are not tart enough, add a little lemon or lime juice.

Chill and serve

  • Refrigerate until cold and serve over ice with fresh mint.

Notes

  • Use firm, green raw mangoes for the best tart flavor.
  • Start with ¼ cup sugar and add more only after tasting.
  • Raw mangoes vary in sourness, so sweetness should always be adjusted.
  • Add water gradually so the aam panna does not become too thin.
  • This recipe is made as a ready-to-drink pitcher, not a concentrate.
  • You can also cook the mangoes whole, then peel and scrape out the pulp, but I find cutting them first much easier.
  • Stir before serving because the spices may settle slightly.
  • Serve well chilled over ice.
